Cranberry-Orange Rumbas
1 egg
1/3 cup milk
1 cup cranberry-orange relish
1/4 teaspoon rum flavoring
1 (14 oz.) package apple-
cinnamon muffin mix
In medium bowl beat egg, stir in relish, milk, and rum flavoring. Add muffin mix, stirring with fork just till moistened. Fill greased or paper-lined muffin cups 2/3 full. Bake in 400 degree oven for 20 to 25 minutes or till done. Serve warm. Yield: 12 muffins.
Pumpkin Pie
1 unbaked pie crust
1 (16 oz.) can pumpkin
3/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon nutmeg
3 eggs
2/3 cup evaporated milk
1/2 cup milk
In a large mixing bowl combine pumpkin, sugar, cinnamon, salt, ginger, and nutmeg. Add eggs; lightly beat eggs into pumpkin mixture. Add the evaporated milk and milk; mix well. Pour mixture into pastry shell. Bake in 375 degree oven for 50 minutes or until knife inserted in pie comes out clean. Garnish with dollops of whipped cream, if desired.
Pecan Tassies
CRUST:
1/2 cup margarine, softened
1 (3 oz.) package cream cheese, softened
1 cup all-purpose flour
Blend margarine and cheese. Stir in flour. Cover; chill 1 hour. Roll into balls and press into muffin pans. Fill with filling.
FILLING:
1 beaten egg
3/4 cup packed brown sugar
1 tablespoon margarine, softened
1 teaspoon vanilla
Dash salt
1/2 cup coarsely chopped pecans
Combine all ingredients together, mixing well. Spoon into pastry lined cups. Bake at 325 degrees about 25 minutes or until filling is set. Cool; remove from pans.
