Sweet Potato Souffle

Turkey and dressing are always at the top of the list at Thanksgiving, but they wouldn’t stand alone without all the side dishes. Two of those side dishes which have always graced my table at Thanksgiving are sweet potato souffle and squash casserole.

Sweet Potato Souffle
3 or 4 large sweet potatoes
1/2 stick butter
3/4 cup brown sugar
1 teaspoon vanilla
1 small can evaporated milk
2 eggs
Boil potatoes until done. Peel and put into mixer and mix well with other ingredients. Pour into a casserole dish and set aside.

Mix 1/2 stick melted butter, 3 tbsp. flour, 1/2 cup brown sugar and crumble on top of dish, then top with 1/2 cup chopped nuts. Bake at 350 degrees for 30 minutes.
