Spinach Balls
Spinach Balls…or Spinach Casserole
2 boxes frozen chopped spinach,
cooked and drained
2 cups herb bread stuffing mix
2 onions chopped
3 eggs beaten
3/4 cup melted
butter (can use less)
1/2 cup parmesan cheese
1 T. garlic salt or powder
1/2 tsp. thyme
1/2 T black pepper or to taste
Mix into drained spinach all of the above. Bake either in a casserole or shape into balls for appetizers (yields about 70). Bake about 20 minutes (for the casserole) or 12-14 minutes (for the balls). Can be frozen before baking. Allow one hour thawing time baking. The spinach balls are very popular. But my family thinks they are too good only to be eaten when you want a hot appetizer. Thus, the casserole.
