WORKING W/ CHILI PEPPERS
Chili peppers add flavor, not just heat, and come in a huge variety of flavors and heat levels.
Hot chilies come fresh, dried, dried and crushed, pickled or canned, and in the form of hot sauce.
To get more flavor and less heat, remove the seeds and white pith from fresh chilies and the seeds from dried chilies.

When chopping fresh hot chilies, use rubber gloves. The juice from some chilies can actually burn your skin. Be very careful to not touch your eyes. Wash your hands, knives and cutting boards with soap and hot water. Rinsing alone will not remove the burning juices.

Chicken Supreme Casserole
2 cans French style green beans
1 jar pimento
1 can cream of celery soup
1 can of mushroom soup
1 medium onion, chopped
1 box Uncle Ben’s Rice with chicken stock
3 boneless chicken breasts
1 cup mayonnaise
1 can water chestnuts
1 can fried onion rings (optional)

Cook rice according to directions on box. Cook chicken breasts and cut into cubes. Combine all ingredients and put in greased baking dish. Bake at 350 degrees for 30 minutes. Last five minutes add onion rings on top and brown.

Crispix Mix Ranch Snacks
8 cups Kellogg’s Crispix cereal
1 1/2 cups Cheez-it snack crackers
1 cup small twist pretzels or rings
3 tablespoons vegetable oil
1 packet (1 oz.) dry ranch salad dressing mix
In a large plastic bag, combine Kellogg’s Crispix cereal, crackers and pretzels. Drizzle vegetable oil over mixture, close bag and shake well. Add the ranch dressing mix, close bag and shake well.

Applesauce-Spice Muffins
3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups raisin bran cereal
1/4 cup apple juice
1 cup applesauce
1 egg
1/3 cup vegetable oil

Stir together flours, sugar, baking powder, salt and spices. Set aside. In large size mixing bowl, combine cereal, apple juice and applesauce, stirring well. Let stand 5 minutes or until cereal is softened. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Fill 12 greased muffin-pan cups. Bake at 400 degrees for 25 minutes or until browned. Serve warm.
