Earth Muffins

I refer to vegetarians as “earth muffins.” Although it may sound condescending, I secretly envy their ability to abstain from eating anything with four legs and/or a face.

I’m not jealous because I’m anti-carnivore, but because I believe that if done right, a vegetarian diet is a healthy alternative for someone seeking adventure.

According to wikipedia, “Vegetarianism encompasses the practice of following plant-based diets (fruits, vegetables, etc.), with or without the inclusion of dairy products or eggs, and with the exclusion of red meat, poultry, and seafood.

Because a vegan diet consists primarily of plant based foods, one may be challenged to find creative ways to incorporate iron rich proteins in each meal.

Some vegetarian foods rich in iron include black beans, cashews, hempseed, kidney beans, lentils, oatmeal, raisins, black-eyed peas, soybeans, many breakfast cereals, sunflower seeds, chickpeas, tomato juice, thyme and other spices, and whole-wheat bread.

I know a complete dietary transformation may seem impossible, but perhaps we should all be more conscious of incorporating fruits and vegetables into what we eat everyday. The benefits include more efficient organ function, improved skin elasticity and decreased fat and cholesterol levels. In addition, with just 3-5 servings per day, you will look and feel better!

When I was growing up, each year my family would enjoy a “meat-free” month in January. It was a great way to start the New Year after consuming the rich and heavy holiday foods for many weeks prior.

If you are not completely convinced a vegan diet is for you but you are ready for some adventure, you could do something similar and “go vegetarian” for limited amounts of time, or for certain meals of the day.

Although I do not claim to be vegetarian, I have adopted some of their philosophies. I believe eating a diet that is rich in fruits and vegetables with a side of a healthy protein alternative can be a flavorful and satisfying way to stay healthy and happy.
