Cold Front
The weather people on television are all predicting we are in for a cold spell, why, the temperature could dip into the 80’s. Brr! And we just got our winter clothes packed away.
Some folks say, “Why don’t you ever write anything useful like recipes?” So, who do you call when you need a tried and true recipe? Well, of course, a good cook!. Jasper County is brimming over with good cooks.
One recipe that I can swear will make your guests lick the bowl is Jean Watkins’ Corn Salad. This complicated recipe can be completed as you are driving to the church dinner or even when you arrive.
Take a can of whole corn, drain good, real good, plop that in a bowl, add mayonnaise and mix. Remember you don’t want any liquid from that corn ruining the vitamins and minerals in the mayonnaise. Right before serving crush up some corn chips and sprinkle over the top. Don’t worry about the chips getting soggy because there is never any left overs. This recipe serves two at my house. Jean says for some color, add some finely chopped green peppers, but not essential.
The other recipe is also in the fix and go category. Buy a package of Twinkies, a package of fun size Butterfingers, a package of instant chocolate and vanilla pudding and some Cool Whip. Layer the Twinkies on the bottom of the bowl, next put a layer of the chocolate pudding, then Cool Whip, then vanilla pudding and so on, topping off with crushed Butterfingers and add a cherry for color.
If you buy the pudding in the cups already made, you can actually make this recipe on the way to the dinner. I once saw a preacher licking the bowl of this dessert.
Labor intensive, wrong, cheap to make, right, popular at the dinners or lunch, just get out of the way. Now is everybody happy?
