1st Day of Spring
Well, Happy 1st Day of Spring, when the sun is exactly above the Equator and day and night are in equal length. Did you feel it or did you let it go?
Regardless of the headlines, nature is blooming and blossoming—azaleas, grasses, Bradford pears and peach trees. Can you see them through those itchy eyes from the pollen? Oh, yes, all our millions of pine trees are just ready to pop as we begin to see the waves of yellow blowing across the land and covering our cars.
Early Spring this year, hasn’t been this early since 1896, 124 years ago, maybe once in a lifetime for you and me. It was a good year for the beloved Georgia Bulldogs, their first undefeated year. Woof! Woof!
After today, the days start to get longer as the Northern Hemisphere (that’s us) tilts toward the sun. Some believe that you can balance an egg on its end today. Let us know if you can do it.
Is it a weed or an exotic food? Each spring dandelions appear in the yard. While in Greece one Spring, we noticed women picking dandelion leaves along the paths.
Then, one dinner there was a bowl of what appeared to be turnip greens, but wrong, they were dandelion leaves. According to Martha Stewart, horta vrasta, dandelion greens, are very good for you, loaded with all kinds of vitamins, very bitter raw but can be doctored up in a salad similar to home-grown lettuce.
In fact, the entire plant can be eaten. The leaves can also be used for a tea or even make wine.
Get out of the house, take a walk, pick some dandelion greens or polk salad, enjoy the joy of Spring as our Earth renews once again.
